Picture: Chris LaneIN not much more than six months, fishmonger Con Melas has achieved tremendous success with his still-new Sans Souci fish shop and cafe, Seafood Works, including most recently winning a special award from SBS television’s Feast magazine.
The word seems to be spreading because Con’s customers are coming from all over St George and the shire and beyond.
His secret is concentrating on fresh seafood from Australia and New Zealand.
“Check the fish supplies in many shops,” Con says, “and you will see food that comes from Asian fish farms.”
“When I began this business, I knew that what we sell to our customers had to be fresh.”
Seafood Works also offer a filleting service by Jerry Christofotiados, who has been in the fish filleting business for nearly 40 years.
Currently, there are not too many filleters around but Con predicts it will be a growing trend.
In the meantime, just watching Jerry flashing his knives is a joy to behold as he prepares fillets to be cooked for customers in Con’s adjoining cafe, or to take home for their special seafood banquets.
Con’s menu also includes fresh oysters with customers able to choose from South Australia’s Smoky Bay, Port Stephens and Pacific oysters.
Seafood Works also caters for all home parties and corporate functions and feedback from party hosts has been impressive.
Con’s motto is “Always fresh. Always available.”
