Paddy the Baker recently opened the doors of their pint-sized Miranda store and almost immediately had customers queuing for authentic Irish bread.

Sarah-Jane and Gerard ‘‘Paddy’’ Winston left Dublin after the financial crisis and ended up in Bundeena. Despite having no background in baking they decided to make traditional soda bread to sell at markets. Opening their own store with baker Wade Younger was the next step.

‘‘The need for good bread in the shire became immediately evident,’’ said Paddy.

‘‘We love food and we are trying to really surprise people with the quality of ingredients.’’

Their signature Irish soda bread contains just four, and no yeast.

“It is great to soak up the juices of a stew or mussels dish,’’ he said. ‘‘It is a staple in Ireland and our best seller.’’

Other favourites include potato bread, Guinness rye made with Ireland’s favourite tipple, and sweet potato and honey loaf. Sweet tooths are satisfied with lemon tart, buttermilk scones and rich chocolate tarts.

Their flaky croissants are the best I’ve tasted.

There’s a small but perfectly formed range of lunch and breakfast items including soup, pies and sausage rolls, and vegetarian focaccia.

Customers also visit for the amazing organic coffee created by Rhys Hart, owner of Engadine cafe, The Jack of Harts.
